Why the Local Larder Matters

Self-catering in the Cairngorms is one of the great pleasures of a Highland holiday, and the quality of your week often comes down to what you put in the boot on day one. The national park is ringed by small towns and villages where butchers, farm shops, delis and community stores still sell food grown and made within sight of the hills. Stocking up locally means better suppers, lighter supermarket trips, and money that stays in the straths and glens you have come to walk.

It also makes practical sense. The nearest large supermarket may be an hour's drive from your cottage, and after a long day on the plateau the last thing you want is a 40-mile round trip for a loaf of bread and a decent piece of cheese.

What to Look For: The Cairngorms Pantry

A few staples are worth seeking out wherever you stop.

  • Venison — red and roe deer from surrounding estates, sold as steaks, haunches, sausages and mince. Mince makes an outstanding ragu or cottage pie; ask the butcher for bones for stock.
  • Berries — raspberries and strawberries in July and August, brambles from late August, and blaeberries picked from the heather in August if you fancy foraging. Rowan jelly is a fine companion to venison.
  • Smoked fish — hot-smoked trout, smoked salmon, smoked mackerel and, further east, Arbroath smokies. Vacuum-packed portions travel well in a cool bag.
  • Handmade chocolates — small chocolatiers in the main towns produce tablet-topped bars, whisky truffles and salted caramel slabs. Ideal for a bothy treat or a wet afternoon.
  • Store-cupboard extras — oatcakes, heather honey, crowdie, crumbly Scottish cheddar, chutneys, and bags of local porridge oats.

Town-by-Town: Where to Stock Up

Aviemore is the busiest hub, with butchers, a deli and shops that stay open through the year. It is the easiest place to assemble a full picnic and to pick up a cool box if you forgot yours.

Grantown-on-Spey has a broad High Street with a proper butcher, a bakery and small grocers; it is a good base for stocking up before heading into the quieter Spey side glens.

Kingussie and Newtonmore are smaller but useful, with community shops and butchers that reward a chat. Ask what has come in that morning.

Ballater and Braemar serve Royal Deeside with excellent butchers, bakeries and delis, and are well placed if you are walking in the eastern Cairngorms.

Tomintoul, the highest village in the Highlands, has a compact shop and honesty boxes on the surrounding farms for eggs, jam and seasonal vegetables. Nethy Bridge and Carrbridge both have friendly community stores that keep the basics and often something better.

Building a Hill Picnic That Travels Well

Mountain weather is unforgiving of careless packing. A few habits will keep lunch appetising at 900 metres.

  • Freeze a bottle of water overnight and use it as an ice block; by lunchtime it is cold drinking water.
  • Carry a flask of soup or hot chocolate from October to April — the temperature difference between the car park and the plateau can be startling.
  • Wrap sandwiches and oatcakes tightly. Wind and midges ruin anything left open, and smoked fish smells carry.
  • Choose hard cheese, cured meats, oatcakes and chocolate over soft cheese and creamy fillings, which do not enjoy a warm rucksack.
  • Take a small bag for rubbish. Nothing should be left behind, including fruit peel.

Self-Catering Suppers Without Fuss

Buy for the week rather than the day. Venison mince freezes well, so split it into meal-sized portions as soon as you arrive. Smoked fish needs almost nothing: stir hot-smoked trout through pasta with lemon and black pepper, or fold smoked salmon into scrambled eggs after a long walk.

Root vegetables, potatoes and neeps from a farm shop will keep for days in a cool cupboard. A jar of rowan jelly, a wedge of local cheese and a bag of oatcakes make a supper on their own when everyone is too tired to cook properly. Save the handmade chocolates for the evening you deserve them.

Practical Notes Before You Set Off

Opening hours in the Highlands are not city hours. Many farm shops and delis close on Sundays, shut early on Saturdays, and take a break in January and February. Ring ahead if you are making a special journey, and place larger orders — a whole haunch, a box of mixed cuts — a few days in advance.

Take cash for honesty boxes and small community stores, even though most places now accept cards. Drive considerately on single-track roads and never park in a passing place or at a field gate. Finally, buy a cool box or two before you travel, and ask your butcher or deli to freeze a couple of ice packs for you. It is the simplest way to keep a week of Highland larder in good order.
